Butchery classes are a big trend around the country. Here in Sacramento, you can take butchering classes from chef Mark Liberman, owner of Black Sheep Butchery. Last night, I attended a class at his kitchen in midtown, where he demonstrated how to break down a whole suckling pig and turn it into the succulent Italian roast known as porchetta.
