Last night I whipped up a mass of roasted cauliflower, a treat my family embraces despite their (proclaimed) loathing of all things cruciferous. If you’ve never tried roasting cauliflower (at high heat), you will be amazed at the transformation of this humble vegetable – it emerges from the oven with a tender texture, nutty character and an irresistible, caramelized sweetness. I dare you to serve it to your vegetable-rejecting kids: you might be surprised to find them gobbling it all up.
