Taylor's Market Offering Zampone di Modena


I have been known to visit Taylor’s Market simply to stand around and ogle the specialty store’s outstanding meat counter. There always seems to be something interesting and novel lodged into their abundant display, and today was no different – I discovered an intriguing item the butcher called a Zampone di Modena. A pork “picnic shoulder” (with the trotter still attached) is boned out, then stuffed with thinly sliced pork meat, Italian sausage, pancetta and garlic. At $7.99/lb., the Zampone costs roughly $50; and after roasting, the succulent-sounding hunk ‘o meat serves 10 to 12 people. I may have to try it for my Christmas dinner.
