Recipe: Selland’s Meatloaf


2 pounds ground beef
1/2 cup chopped red onion
2 eggs
1 cup shredded cheddar cheese
1/4 package saltines, finely crumbled
1/2 cup tomato sauce
1 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup ketchup

Preheat oven to 325 degrees. Place ground beef, red onion, eggs, shredded cheese, cracker crumbs, tomato sauce, salt and pepper in a large bowl and combine, using your hands. Mound the mixture into a loaf pan, pushing down firmly. Spread ketchup over the meatloaf and bake for 1 ½ to 2 hours, until internal temperature reaches 160 degrees. Remove from the oven and let rest for 20 minutes before slicing and serving. Serves 6.
