Last night, Rick Mahan fired up the pizza oven at his new OneSpeed pizzeria for the first time. Earlier that day, the not-yet-open East Sac restaurant had passed the fire marshal’s inspection. So Mahan invited a few friends over for an impromptu pizza party in order to put the new oven through its paces. I got to taste one of the first pies: thin crust, nicely blistered from the hot oven, topped with sausage, onions and a drizzle of olive oil. It tasted pretty fabulous to me, but Mahan promised his pizzas will be even better when the restaurant opens sometime in the next two weeks.
