Making Wine Green

What: The world’s greenest winery
Where: UC Davis
Details: The first LEED Platinum winery is under construction at UCD’s Robert Mondavi Institute for Wine and Food Science. (LEED is a green building rating system; platinum is its highest certification.) Set to open in August, it will serve as a “test bed” for sustainable winery practices that reduce water and energy use. “This is the winery for this generation,” says Dr. Andrew Waterhouse, chair of the Department of Viticulture and Enology. “We will have a 21st century research facility that can truly help California winemakers leap ahead in quality and sustainability.”
