On a sweltering summer afternoon, this refreshing chilled soup is guaranteed to cool you down and lift up your spirits.
1 8-ounce can crushed pineapple with juice
1 14-ounce can light coconut milk
2 teaspoons fresh lime juice
1 teaspoon vanilla
2 tablespoons sugar
2 cups fruit of your choice (suggestions: bananas, mango, peaches, strawberries, mandarin oranges, papaya), cut into bite-size chunks
1 tablespoon chopped fresh mint leaves
Pure the pineapple (including its juice) with the coconut milk in a food processor or blender. Pour the mixture into a bowl and add the lime juice, vanilla and sugar. Mix well. Add the fruit of your choice and stir gently. Refrigerate mixture until cold. Just before serving, stir in the chopped fresh mint, reserving a little for garnish.
