I love huevos rancheros. One of my favorite versions in town is made by Ink Eats and Drinks, who places a crispy/chewy corn tortilla over hot black beans, then tops it with loads of cheddar cheese, spicy housemade salsa and the eggs of your choice (I like over-medium), finished with a dollop of sour cream.
