On July 13th, Lounge ON20 is hosting a winemaker dinner with Florencia Palmaz of Napa’s Palmaz Vineyards, a unique family-owned estate whose winemaking and aging processes take place underground. Considered a “gravity-flow winery,” this intriguing facility includes a wine cave whose height is equivalent to an 18-story building.
Florencia Palmaz will discuss the benefits of “gravity-fed” winemaking and how it affects the wine, and Lounge ON20’s chef Pajo Bruich will feature a seven-course tasting dinner paired with Palmaz wines. Dishes include sturgeon with crispy prosciutto, figs and a sherry vinaigrette, partnered with a Palmaz Cabernet Sauvignon; and a foie gras mousse with “textures of cherry” and whipped honey, served up with Palmaz Muscat.
