Check out these clever carrot cake cookies from Magpie Cafe on R Street. Cafe baker Steve Yarbrough sandwiches sweet cream cheese frosting between two thin, chewy/crispy cookies made with traditional carrot cake ingredients (shredded carrots, golden raisins and brown sugar). Magpie has a hard time keeping them in stock, he says; the cafe sells 60 of them a day. As soon as persimmons come into season, Yarbrough plans to make a persimmon sandwich cookie with a hint of goat cheese in the filling.
