‘Tis the season for fava beans, and I’m seeing them on menus all over the region. Tazzina Bistro in Woodland is serving the lovely green legumes in a sumptuous bruschetta, tossed with tiny bits of bacon and a touch of earthy truffle oil; while OneSpeed in East Sacramento is sprinkling the beans on pizza (with smoked ham and sheep’s milk cheese) and dotted atop creamy spring garlic mashed potatoes with a toothsome chunk of Alaskan redbanded rockfish (never heard of it? See http://www.afsc.noaa.gov/rockfish-game/description/redbanded.htm). I’ve even discovered fava beans in a steaming bowl of Enotria’s garlicky, delicious sautéed clams and mussels.
