Feasting on Favas

2843

‘Tis the season for fava beans, and I’m seeing them on menus all over the region. Tazzina Bistro in Woodland is serving the lovely green legumes in a sumptuous bruschetta, tossed with tiny bits of bacon and a touch of earthy truffle oil; while OneSpeed in East Sacramento is sprinkling the beans on pizza (with smoked ham and sheep’s milk cheese) and dotted atop creamy spring garlic mashed potatoes with a toothsome chunk of Alaskan redbanded rockfish (never heard of it? See http://www.afsc.noaa.gov/rockfish-game/description/redbanded.htm). I’ve even discovered fava beans in a steaming bowl of Enotria’s garlicky, delicious sautéed clams and mussels. If you’re a fan, now’s the time to go get ’em.
