Eat it Up: Summer Squash

Summer squash is everywhere right now, and it’s available in a gorgeous array of yellow, white and green colors (and designs). My favorite way to cook summer squash is to slice it up and sauté it with garlic, a handful of candy-sweet, tiny cherry tomatoes and chopped fresh basil. I then garnish the squash with feta cheese and toasted walnuts, and serve it up with thick slices of just-baked bread and a glass of Viognier or Chardonnay.
