Allora, an upscale East Sac restaurant serving modern Italian seafood, had barely reopened from the COVID-19 shutdown when the governor ordered a halt to indoor dining two weeks ago. No matter. The restaurant’s owners, Deneb Williams and Elizabeth-Rose Mandalou, quickly pivoted to outdoor service only, placing custom-made divider screens between tables to safely squeeze seven tables on their outdoor patio. “It’s a beautiful time to sit outside,” says Mandalou, who as sommelier oversees the restaurant’s largely Italian wine list. Allora now offers a prix-fixe menu with three price points ($85, $105 and $125), along with a to-go menu of family-style meals such as chicken parmigiana, beef short ribs and take-and-bake lasagna Bolognese. Mandalou says she and Williams are going to “pivot really hard” no matter what the pandemic throws at them. “If somebody tries to take my restaurant away, they’re going to have to pry it out of my cold, dead hands,” she says.
