Two words sum up Thunder Valley Casino Resort Executive Pastry Chef Stephen Smith’s philosophy on pastries: Fresh Baked.

Each day Stephen and his team of pastry chefs prepare the delectable desserts available in the restaurants through the casino. Using the finest ingredients, the desserts are handcrafted from recipes Stephen developed from decades of experience in the food service industry. Before coming to Thunder Valley Casino Resort, Stephen dazzled palates at Alexis Park in Las Vegas and the Embassy Suites Maui among many other bakeries across the world. Today, he makes sure that every dinner roll, Danish & wedding cake is as enjoyable to look at as it is to eat. To hear Seamus Collins tell it, food preparation is as much about its sensory appeal as it is the inspiration that went into its preparation. Seamus is the Room Chef at The Buffet at Thunder Valley Casino Resort, where he instills the vision of “food as art” in all dishes. It was a long road to Thunder Valley’s weekly crab and prime rib buffets for Seamus, who started as a busser at restaurants in Santa Fe, NM and was inspired by the chefs he worked with. After a tour of duty in the U.S. Navy, where he spent time as an Admiral’s Chef, Seamus earned his BA in Culinary Arts from Le Cordon Bleu Culinary Institute and now puts his years of experience to use each night impressing guests at The Buffet.

Jarunee studied food preparation and cooking as an apprentice to her uncle, who was the Executive Chef at the 5-star Oriental Hotel in Bangkok, Thailand. She has been a chef for 15 years and loves making people happy with her food. “I love to cook and see people enjoying my food,” Jarunee says. Her favorite dish to prepare is Thai Curries. The most challenging part of her job as a chef is managing the restaurant. Judging from the consistently long waiting lines on Fridays and Saturdays at Thai Paradise, the restaurant in Folsom owned by Jarunee and her husband, Alex, she seems to be handling the challenge quite well. When Jarunee is not cooking, you can find her enjoying growing flowers.
