If you haven’t visited Roseville’s new Cibo 7, I’d encourage you to give it a try. This upscale restaurant is cranking out some really creative and beautiful food, though the (eye-poppingly) high prices may be prohibitive for some. I had a stellar meal at the restaurant recently, and one standout dish was the kitchen’s seared Diver scallops, arranged stunningly on a plate atop cauliflower puree with sweet parsnip chips and crispy bits of prosciutto, all strewn with delicate micro greens. The scallops were the most tender I have ever encountered, and the dish’s inspired flavor and texture combinations were impressive. This is one Cibo 7 menu item I look forward to savoring again in the future.
