I had a knockout heirloom tomato and peach gazpacho this week at Roxy Restaurant and Bar —pureed with a touch of Fresno chili, the just-slightly-cool soup was deliciously refreshing, with a teeny bite of spicy heat that lingered enticingly on the palate. Bursting with juicy, summery flavors, this excellent, basil- and olive oil-adorned soup was a great companion to Roxy’s chopped salad, which is tossed with organic chickpeas, chunks of tangy aged cheddar cheese, and chopped fresh mint.
