Fruity Tipple: Ernesto’s Raspberry Mojito


I’m a big fan of mojitos, especially on warm afternoons—but I have found a variation on the traditional, super-minty version that just may become my new favorite. Ernesto’s Mexican Food crafts a lovely, blushing-pink raspberry mojito that contains raspberry puree in addition to a judicious amount of muddled fresh mint and lime. Fortified with rum and Triple Sec, the fruity, very refreshing (and just sweet enough) cocktail is garnished with a red raspberry, mint leaves and wedge of lime. Pair it with Ernestos’ tasty shrimp quesadilla or the popular chicken avocado salad.
