Benedict Arnold

The Benedict Arnold is Fox & Goose’s version of eggs Benedict, and it has a distinctively British twist. Instead of the traditional hollandaise sauce, the dish is served with a thick Welsh rarebit cheese sauce, whose robust (and beery) sharpness is an excellent accompaniment to the the soft-poached eggs.  I like to add spinach to the Benedict Arnold (it tastes great with the rarebit), and on lazy weekend mornings make sure to pair the dish with an “OK, Fine” – Fox & Goose’s house-made Bloody Mary.
