editorial profile:
Not everyone can hire a personal chef, but nearly all of us can pretend we have one at least for a day. This is where Pullman Kitchen comes in. Found in the Market Hall at Quarry Ponds shopping center, the kitchen is a pint-sized food store that is making it easier to get fresh food while on the run. Pullman Kitchen is narrow and small and loosely designed after a Pullman Sleep Car of the 1800s. The slender glass case holds slices of quiche, and Idaho trout wrapped in bacon. It also has a slow-moving rotisserie oven that spins herb-brined free-range whole chickens. Its mission is to become the place locals think of when in a culinary jam. “If you don’t feel like cooking, call us. That’s what we are here for,” says Chef William Stroud. The menu rotates weekly and seasonally, but one can usually find a handful of main and side dishes such as meatloaf, chicken enchiladas, sautéed green beans or twice-baked potatoes. Cindy Arora
