Fans of downtown Sacramento’s Ernesto’s Mexican Food and Cafe Bernardo will be pleased to know that Mas Cocina Mexicana in Roseville is directly related to these two fine establishments. Mas, a festive collaboration between restaurateurs Ernesto Jimenez (of Ernesto’s and Zócalo) and Randy Paragary (of the Paragary Restaurant Group, including Café Bernardo) is a terrific place to visit for vibrantly fresh and flavorful Mexican cuisine. The ambience is quite similar to Ernesto’s—colorful, snowflake-like papers dangle prettily from the ceiling, and lively Mexican tunes perk up your dining experience. The booths are springy, the waitstaff is cheerful, and the bar does a brisk business in Corona beer and frisky cocktails like the “Top Shelf,” made from tequila, fresh hand-squeezed lime juice and agave nectar. Many of the dishes at Mas will be familiar to Ernesto’s fans, from the creamy bean dip served with warm corn chips to the warm-your-soul pozole and cheesy veggie enchiladas. The fajitas mixture—containing thin-sliced carrots, zucchini, bell pepper and onion in addition to the meat of your choice —is marvelous, and arrives with a mountain of just-made guacamole, black beans and rice; and the carnitas are absolutely succulent. Mas salads are always great on a sweltering day; try the robust crispy tortilla salad—marinated chicken breast atop romaine lettuce with sliced jalapeños, diced tomatoes, black beans, sour cream and guacamole, piled in a huge deep-fried flour tortilla shell. Kids definitely get special treatment at Mas, with a nice menu of their own and lots of attention from staff members. This is a great family destination. — Kira O'Donnell
