Hotel restaurants don’t always have the best reputation for creative menu offerings or lively atmosphere. But Formaggio Taverna—decorated in a sunburst of orange and red colors and boasting a menu of seasonal produce and artisan details—is redefining what hotel restaurants can do in the kitchen. Formaggio, in the Marriott Hotel in Rancho Cordova, has a warm and relaxing atmosphere—including a sprawling outdoor patio—that bodes well with the traditional hearty Italian foods. Chef David Boswell turns traditional pastas, such as pappardelle, and reinvents it with braised Sonoma rabbit, wild mushrooms and topped with goat cheese made in the North Bay. Wood fire oven pizzas such as the grilled vegetable panino are made with seasonal vegetables and artisan cheese and the bistecca alla fiorentina is a New York steak served with Parmesan potatoes. Salads, appetizers, seafood dishes and its handcrafted cocktails are all made with the mission to use seasonal and organic ingredients “We use all organic, locally grown foods,” said Neil Glass, manager of Formaggio.” We have fresh fish delivered to us everyday and all of our (meats) are humanely raised.” Take a seat outdoors overlooking the hotel pool and order from its California-driven wine list. " My companions and I were disappointed after our lackluster lunch at Formaggio in late July. The waiter neglected to tell us the specials and ignored us the majority of the time, even though the restaurant was nearly empty. My grilled vegetable panini was served on flavorless, white Wonderbread-like bread. I\'ll chalk up my experience to the restaurant still be fairly new. Sometimes it takes a couple of months for a restaurant to work out the kinks. "
