editorial profile:
It’s always delightful to discover a small, family-owned restaurant buried in a shopping mall. It’s even better when that restaurant serves up a menu of earnest, flavorful and distinctive items, carving out a compelling (and attractive) identity for itself despite the anonymity of its location. Folsom Bistro, located along busy Folsom-Auburn Road, has done an exemplary job of accomplishing just that. Owners Atasha and Matthew Newton (former chef de cuisine at The Firehouse and executive chef of San Francisco’s Jeanty at Jacks) have created a friendly and warm little eatery smack-dab in the middle of a shopping strip. To help potential patrons notice their bistro, they’ve cleverly placed a beautifully set table—with crisp white tablecloth, silverware and shiny wine glasses—out on the sidewalk in front of their front windows. The restaurant is simply decorated, with a few oil paintings hanging on its periwinkle-blue walls and a beautiful scarlet swathe of diaphanous fabric concealing the entrance to the kitchen area. Service is attentive and enthusiastic, and—even though it is clearly an elegant establishment—young children are warmly welcome. (There’s even a kids’ menu.) Salads are excellent at the Bistro—try the rich and airy butter lettuce salad, tossed in a creamy, cheesy pistachio vinaigrette; or the generously-sized roasted beet salad, showcasing these earthy, sweet root vegetables with peppery arugula leaves, juicy orange segments and tangy, dry-aged sheep’s cheese. Lunch items range from the luscious (and caloric!) chicken-mushroom crepes, bathed in a silky pesto-goat cheese cream sauce, to a messy-to-eat but fabulous Kobe beef burger topped with soft, caramelized onions and tomato slices. Recommended dinner items include the exceptional braised beef short ribs, so fork-tender and fragrant you won’t be able to share; and the Maple Leaf duck breast, perched atop a lavish celery root puree. The chef’s mother bakes all the restaurant’s breads and dessert. If you’ve got a sweet tooth, try her rich and satisfying crème brûlée. — Kira O’Donnell
Insider tip: If you get a chance, try one of Chef Newton’s seasonal soups—of special note are the bright, cleanly flavored cream of asparagus soup and the rustic, sweetly appealing Granny Smith apple-parsnip soup.

" We have eaten at Folsom Bistro quite a few times. The food is so delicious and the servers are very friendly. We and some friends have pledged to ensure they stay open and are successful, so we try to eat there one Saturday a month; however, we've been seen on a couple of Fridays and a Monday! The food is just too hard to resist. "

" I'm a Health Inspector in San Francisco and have sampled a lot of great restaurants. This one stands up to some of the best. When I heard that Chef Newton was leaving San Francisco to start his own restaurant, I thought that I would miss his culinary creative. However, I was pleased to find out that the Folsom Bistro is easily accessible from Hwy 80. It's become a much anticipated stop on the way to and from the slopes. Instead of fighting traffic, we stop and enjoy a great meal! "

" After growing up in the midwest and then living in San Francisco for nearly 15 years prior to moving to the Sacramento area in 2002, my husband and I appreciate a community as well as gourmet fine dining. A friend introduced us to the Folsom Bistro. The food is big city quality and is highlighted by the most charming hospitality I have ever experienced. Matt and Atasha Newton are an exceptional host and hostess. You have to pinch yourself to ensure you remember you are not just part of the family. Yet, you can't escape feeling like you really are related.
My father recently had major surgery and had little appetite following the procedure. We had eaten at the Folsom Bistro prior to his operation and both of my parents loved the food. After my Father's surgery, my father simply craved Matt's food. I can't explain how special it was that Matt and Atasha went out of their way to accomodate my father's appetite and preferences. This is a truly unique restaurant because of the special people who are at the heart of the Folsom Bistro. The Sacramento area is lucky to have such a special place in our Hamlet. Thank you Matt and Atasha for creating such an amazing local place for gourmet lover's and new friends. ;0) "
