Cheese fans will be thrilled to discover that The Rind, a “cheese-centric bar” located in the heart of midtown, has finally opened. In addition to an array of cheeses available for tasting, The Rind also offers a tempting and scrumptious lineup of grilled cheese sandwiches and mac ‘n cheese selections. Interested in trying some locally-crafted products, I visited recently and ordered one of the establishment’s pretty cheese boards. It arrived bearing two excellent cheeses from Sonoma County’s Bellwether Farms: the creamy, buttery Carmody, and the Pepato, a semi-soft, sheep’s milk cheese punctuated with feisty whole peppercorns. The third was Cowgirl Creamery’s bold, rich triple cream cheese, Red Hawk, wrapped in a beautiful red-orange rind. Crafted in Pt. Reyes, this is another cheese that does Northern California proud. Other treats we savored at The Rind included a fabulous salad featuring locally-grown greens and beets, enlivened with a dash of lemon zest; and the best grilled cheese sandwich I have ever tasted, showcasing Modesto’s Fiscalini “clothbound” cheddar cheese and tangy sourdough bread.
