Chef Kelly McCown and the intrepid kitchen staff at Ella Dining Room and Bar have procured a whole pig from local farmer John Bledsoe, and have grand plans to transform the beast into “wonderful classic special dishes” for customers throughout the month of March. “Head to tail” offerings will include country and classic style pates, pork belly, blood sausage, house-cured ham, and pork ribs.
